A bottom layer of cookies, a middle layer of cheesecake, and crumbles of chocolate chip cookies on the top, ensure an amazing desert that will get every country’s vote for number one!
If you run out of time, or want a speed-up, buy a box of cookie mix, and substitute it for the cookie topping. Make as prescribed on the box, and crumble the raw dough over the cheesecake layer at the appropriate step.

Ingredients
- [b]Crust Layer[/b]
- 110 grams chocolate (chips or a broken up bar)
- 60 grams butter
- 225 grams of Chocolate cookies (Oreos or chocolate cream cookies)
- [b]Cheesecake Layer[/b]
- 1/2 cup sugar
- 450 grams cream cheese
- 2 eggs
- 1 tsp vanilla extract
- [b]Cookie topping[/b]
- 115 grams butter
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 egg
- 1 3/4 cups flour
- 1/2 tsp salt
- 1/8 tsp baking soda
- 1/2 tsp baking powder
- 115 grams chocolate chips
- 115 grams white chocolate chips
Instructions
[b]Crust layer[/b]
- Preheat the oven to 175°C (150°C in convection oven).
- In a medium glass bowl, combine the chocolate and butter and microwave at high power in 20-second intervals until the chocolate is just melted. Stir well, then stir in the cookie crumbs.
- Press the cookie crumbs evenly over the bottom and up the rim of a 10-inch tart pan with removable bottom.* (Be sure not to make the crust too thick in any one spot, especially around the rim. Keep it thin throughout, otherwise it will come out too hard.) Bake the crust for 10 minutes, then cool on rack.
[b]Cheesecake layer[/b]
- Beat the sugar into the cream cheese until smooth.
- Beat in the egg followed by the vanilla extract.
- Pour the mixture over the cooled crust layer
[b]Cookie topping[/b]
- In bowl of electric mixer fitted with paddle, cream together butter and sugars until well blended and fluffy. Add eggs, one at a time.. and beat until well incorporated.
- Add flour, salt, baking soda, baking powder and mix until just combined. Gently fold in chocolate chunks and nuts.
- Transfer dough to clean work surface and gently mix dough by hand to ensure even distribution of ingredients.
